Shiga toxin-producing E.coli strains (STECs) are a pathogenic subcategory of the otherwise mostly harmless Escherichia coli bacteria. These STECs have been the cause of numerous food-borne outbreaks in recent years and can lead to severe diseases such as haemolytic uremic syndrome (HUS). E.coli O157:H7 is the most prominent of the Top7 STECs, which are considered the most relevant regarding human health.
